Flourless Healthy Breakfast Pancakes

Some mornings, cereal just doesn't float-my-boat and I want something a little nicer but I still don't want anything unhealthy. About a year-or-so ago, I found a recipe for healthy pancakes on Pinterest, (you can follow me here shameless self-promotion*) and I just have to share it with you all!

Most recipes for pancakes are rather unhealthy and have flour in them. But for someone like me who is gluten intolerant *cries* and I am trying to eat as clean as I can, these pancakes are perfect. And you only need 3 ingredients and you can make them in less than 10 minutes. And who doesnt want to have pancakes to start the day?! 

Cooking time: 10 minutes max.
Makes: 3-4 medium pancakes.

You will need:
2 small eggs/one large egg
1 banana, mashed well
4 tbls of milk

Crack the egg(s) into a small bowl and whisk well. 

Add the mashed banana and milk then mix the mixture thoroughly. I use soya milk because I can't drink a lot of cows milk.

Pour some of the mixture into a hot oiled pan, (fry-light is great). As soon as you start to see the pancake bubble and sizzle a little bit, turn it over. Now repeat until you have cooked them all.

Serve them with any topping of your choice. I like these pancakes with some berries on the side or some honey drizzled on top.
